Oh sushi. Let me count the ways I love thee!! I’ve always been a fan of sushi. When I became vegetarian/vegan, there was a sushi place down the road from my house that had my favourite roll. It was called “Accompong” and was made up of fried plantain and avocado. I mean – pretty perfect right?

That place has since shut down sadly. While I love trying amazing new vegan sushi combinations while on trips, my go to is an AC roll – an avocado cucumber roll. I always have extra ginger alongside my rolls, and dig deep into my soy sauce dip. Easily said, sushi is one of my favourite meals. 

That being said, I haven’t to this day been able to convince myself to make sushi at home. I’ve been having more of a craving for sushi on a regular, and this vegan sushi rice bowl popped into my mind! All the flavours, none of the roll, easy peasy!

How to make a sushi rice bowl

This vegan sushi rice bowl is incredibly easy to make. While I love my rice on my sushi, I wanted to switch it up here by using cauliflower rice. This basically makes it a low carb sushi rice bowl. Of course you could sub sushi rice or regular rice – it’s up to you! Next I added some of my ideal sushi fillings in the bowl.
 
I went for Ribboned carrots, slices of avocado, black sesame seeds, julienned red peppers, sushi ginger and crispy nori sheets. Fun fact – I actually made the crispy nori sheets myself! If you want a recipe for that let me know. Otherwise, just buy your favourite seaweed snacks. 
 
Since a bowl usually comes with some kind of yummy dip or dressing, I decided to play up the typical soy sauce soak. I made a sesame soy dressing with a little bit of maple syrup, sesame oil, soy sauce (I used liquid aminos) and rice wine vinegar. I used this two ways. In the cauliflower rice for some bomb flavour, and as a dip or a drizzle over the whole bowl.

Quick Tips

Customise this to how you love sushi. You could even quick pickle some veggies, add edamame, or remove something. Make this bowl yours! 
 
You could easily prep this ahead of time. I would recommend slicing up everything and preparing the cauliflower rice sans sauce. When ready to eat, serve with the dressing.

Ingredients

Sesame Soy Dressing

  • 1/2 teaspoon sesame oil
  • 1 1/2 tablespoons liquid aminos
  • 1 teaspoon water
  • 1/2 teaspoon rice wine vinegar
  • 1 teaspoon maple syrup

Vegan Sushi Rice Bowl

  • 1 cup cauliflower rice
  • 1/2 cucumber, julienned
  • a few slices of sushi ginger
  • about 1/4 of an avocado, sliced
  • 3-5 crispy nori sheets, also known as sea snacks
  • 1 medium size carrot, peeled then ribboned
  • 1/2 red bell pepper, sliced

Instructions 

Sesame Soy Dressing

  • Mix all the ingredients in a jar with a lid by shaking vigorously together. Shake again before pouring over! The amount you use is up to you - I did not use everything!

Vegan Sushi Rice Bowl

  • Add all the ingredients to a bowl. Pour some of the sesame soy dressing over it (especially the cauliflower rice) and mix to combine. Enjoy!

Notes

I used cauliflower rice but feel FREE to use brown or white or sushi rice!
