I’m all over black beans, chickpeas, and even kidney beans, but white beans are a variety I don’t use all that much in my cooking. It’s not that I don’t like them, it’s just that it doesn’t occur to me to use them. So that’s the story behind this roasted garlic white bean dip—I wanted to switch up my bean game! - Sea salt and freshly ground black pepper
- Olive oil – Adds richness and helps create that smooth, creamy texture.
- Room temperature water – This loosens the dip without adding more oil and making it too rich.
- Fresh herbs – Oregano, basil, and parsley add an herbaceous, fresh flavour that balances the savouriness of the dip.
- For serving – I like to garnish with olive oil and parsley if I’m making this for a party.
How to Make Roasted Garlic White Bean Dip
The process couldn’t be simpler! Here’s a step-by-step look at what you’ll need to do.



- Prepare the beans. Drain and rinse the white beans, then pat them dry.
- Blend. Add the beans, roasted garlic, sea salt, black pepper, olive oil, water, oregano, basil, and parsley to a food processor. Blend until completely smooth and creamy.
- Chill. Although it’s optional, I recommend chilling the dip for 2 hours to let the flavours meld.
- Garnish and serve. Transfer the dip to a bowl and drizzle with olive oil, sprinkle with fresh parsley, and serve.
Tips and Variations
I have a few more pointers for this recipe before you get started.
- Adjust the consistency. If you prefer a thinner dip, add a little more olive oil, but note that you might need to adjust the seasoning if you end up adding a lot of extra oil.
- Add lemon juice. A squeeze of fresh lemon adds a layer of bright, citrusy flavour.
- Spice it up. Blend in some red pepper flakes for heat or drizzle the dip with chili oil for garnish.
- Fold in the herbs. If, instead of a completely smooth dip, you’d like the bits of fresh herbs visible, you can puree all of the other ingredients, then stir in the chopped herbs.

Serving Suggestions
I love this roasted garlic white bean dip as part of a mezze-style dinner platter. We serve the dip with homemade pita chips, all kinds of olives, crispy falafel, and tabbouleh. So good! You can also serve it:
- For a game day snack with other favourites like vegan meatballs and pretzel dip.
- Instead of mayo as a sandwich spread (I love it on toasted gluten-free bagels with sliced cucumbers and vegan carrot lox).
- As a snack with crisp raw veggies.

Roasted Garlic White Bean Dip
Ingredients
- 16 ounces any white beans, 1 can – I used butter beans, 425g
- 3 cloves roasted garlic
- 1/2 teaspoon sea salt to taste, 3g
- 1/2 teaspoon freshly ground black pepper to taste, 1g
- 3-4 tablespoons olive oil, to taste, 45–60mL
- 2 tablespoons room temperature water, 30mL
- 1 teaspoon chopped oregano, 1g
- 1 teaspoon chopped basil, 1g
- 1 teaspoon chopped parsley, 1g
To Serve
- Olive oil to drizzle
- Parsley to garnish
Instructions
- Drain the white beans of their liquid and rinse in a strainer. Pat dry.
- In a food processor, add all the ingredients. Blend until smooth and creamy. You can add more olive oil if you prefer you dip to be even thinner, but add extra seasonings to compensate for the extra liquid.
- Serve in a bowl, and if possible, allow to chill for 2 hours before serving so flavours can marry together.
- Drizzle with olive, garnish with parsley and serve with chips and enjoy!
