The last couple of weeks for me have really been on the go. The type of “go” that is constant and interesting – flights, speaking engagements, meetings in person, over the phone and so much more. It’s officially summer, so no doubt you’ll either be attending a summer party or hosting one. If you’re like me, you’re looking to serve something that is satisfying and completely simple. Every summer I share new quick and easy appetizers with you, but today’s ones are extra special with a new product I’ve been waiting to share with you guys. These appetizers are made on top of Wasa’s new Gluten Free crispbread crackers as the yummy base. The sturdy, crisp and crunchy base works so perfectly with these appetizers. I love that I made both sweet and savory toppings, and it worked so well with both  varieties.

So, let’s break down the amazing flavors that are happening before our very eyes. You need to know that these all take LESS than 15 minutes each. First up, the Pesto and Burst Tomato Crispbread. Definitely a flavor explosion with sautéed burst tomatoes over a base of incredible pesto, topped with a balsamic glaze. Literally dreaming about this one.

Next, my total favorite – Strawberry and Cream Crispbread. I wasn’t sure how the sweet combination would work, but trust me, it really did. Fruity sweet strawberries with the creamy vegan cream cheese spread topped with refreshing mint and a sweet maple dressing will hit all the right notes in your mouth. Yum.

Lastly, the Classic Bruschetta Crispbread. Let’s be real – sometimes we just want a classic app that is known for its umami flavors. This one is beautiful, simple, and definitely a crowd pleaser.

These 3 quick and easy summer appetizers are incredibly simple to prepare! They’re made with delicious spreadable toppings atop  a gluten free crispbread cracker base! The toppings add a variety that is sure to please any snack lover!

Ingredients

Pesto and Burst Tomato Crispbread

  • 2 Wasa Gluten Free Crispbread crackers
  • 2 teaspoons olive oil
  • ½ cup cherry or grape tomatoes, sliced
  • salt and pepper
  • 2 tablespoons homemade pesto, or store-bought
  • Balsamic Glaze:
  • ¼ cup balsamic vinegar
  • 1 tablespoon maple syrup or coconut/brown/cane sugar
  • ¼ teaspoon fine sea salt
  • ¼ teaspoon ground black pepper

Strawberry and Cream Crispbread

  • 2 Wasa Gluten Free Crispbread crackers
  • 2 tablespoons vegan cream cheese
  • ½ cup sliced strawberries
  • Lime zest on top
  • Chopped mint
  • Maple Lime Dressing:
  • 2 tablespoons maple syrup
  • juice of half a lime, about ½ tablespoon
  • zest of half a lime, about 1 teaspoon

Bruschetta Crispbread

  • Bruschetta:
  • 2 Wasa Gluten Free Crispbread crackers
  • ½ cup cherry or grape tomatoes
  • 1 teaspoon olive oil
  • ½ teaspoon garlic powder
  • Salt and pepper
  • 2 teaspoons julienned basil
  • Balsamic Glaze:
  • 1/2 cup balsamic vinegar
  • 2 tablespoons brown/coconut/cane sugar
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon ground black pepper
  • herbs, for garnish

Instructions 

Pesto and Burst Tomato Crispbread

  • In a pan, add all the ingredients for the balsamic glaze. Bring to a boil, then to medium heat, stirring continuously, for about 5 minutes, until the glaze begins to thicken. Remove from heat and allow to cool completely. The glaze will be much thicker.
  • In another pan over medium high heat, heat the olive oil. Add the slices of cherry or grape tomatoes to the heat, and sauté for about 5 minutes, stirring constantly, until tomatoes are burst and blistered. Remove from heat and allow to cool slightly.
  • Spread a tablespoon of pesto onto each Wasa Gluten Free Crispbread cracker. Add the tomatoes on top, then season with salt and pepper.
  • Drizzle the glaze over the cracker, serve and enjoy!

Strawberry and Cream Crispbread

  • In a small bowl, mix together the maple lime dressing ingredients, whisking thoroughly.
  • Spread a tablespoon of vegan cream cheese onto each Wasa Gluten Free Crispbread cracker. Top with sliced strawberries, lime zest, chopped mint, and drizzle some maple lime dressing on top. Serve and enjoy!
  • Balsamic Glaze:
    In a pan, add all the ingredients for the balsamic glaze. Bring to a boil, then to medium heat, stirring continuously, for about 5 minutes, until the glaze begins to thicken. Remove from heat and allow to cool completely. The glaze will be much thicker.
  • Bruschetta:
    Dice tomatoes into small cubes, and place in a bowl with olive oil, garlic powder, salt and pepper. Toss to coat.

    Top each Wasa Gluten Free Crispbread cracker with half the bruschetta mixture and half the basil. 

    Drizzle the glaze over the cracker, serve and enjoy!
