My latest California musings: the food scene is completely off the charts. Also, the weather. It was pretty hot two weeks ago, then the last two weeks have been absolutely frigid, with one day dropping to 7 degrees Celsius! Today was much warmer (thank God!) so much so that I stood in the sun. As a result, I’m finally ready to say it: I could use a smoothie/shake!

I have been having all the warm foods because of this cold weather. With a suitcase full of rompers and cute tees, I ended up walk-no running to the mall to get a few sweaters, a pair of boots, two light coats and a couple of other items. Now that it’s finally warming up – please stay that way – I’m ready for the spring foods. Some smoothies, some greens and some yummy breakfast meals. Case in point: This Mint Chocolate Coffee Shake. Vegan Mint Chocolate Coffee Shake

This Mint Chocolate Coffee Shake will wake you up in the morning! It’s smooth, deliciously chocolatey and so easy to make!

Ingredients

  • 2 tablespoons Silk Vanilla Almond Creamer
  • 1 cup Silk Almondmilk Original
  • 1 medium frozen banana
  • 1 tablespoon cocoa powder
  • ½ tablespoon ground coffee*
  • About 8 mint leaves
  • 1 teaspoon coconut flakes, optional
  • To with coconut flakes, mint leaf and cacao nibs

Instructions 

  • Mix the ½ ground coffee with ½ tablespoon boiling hot water and stir to dissolve it . This step is optional, but will ensure that the coffee is completely smooth in the smoothie.
  • Mix all the ingredients together in a high powered blender until smooth and creamy. Add maple syrup to taste if you need the smoothie to be sweeter. Enjoy!
