Soak the cashews in hot water for 15 minutes and cook the pasta to al dente, reserving some of the cooking water for the sauce.
Mix sour cream and Cajun seasoning together, and stir in the chicken. Heat olive oil and cook chicken until it’s browned, stirring once.
Remove chicken, then sauté onions and garlic until softened. Stir in the diced tomatoes, tomato paste, and remaining Cajun seasoning.
Drain the cashews and blend them with water, salt, and pepper. Pour the cashew cream into the skillet and cook until it thickens.
Stir the pasta and vegan chicken into the sauce. Garnish with vegan Parmesan and parsley, and serve immediately.
