These vegan Loaded Sweet Potato Skins are healthier than the traditional version, but still crispy, cheesy, and packed with flavor!

Main Ingredients

Sweet Potatoes Garlic Onion Black Beans Bell Peppers

Tomato Yoghurt Mozzarella Jalapeno Seasoning

Prick sweet potatoes with a fork and bake for 45-50 minutes. Slice in half and allow to cool.

Cook onions, garlic, bell peppers, and tomatoes. Scoop the flesh out of the potatoes and mix with all other ingredients.

Rub the bottoms of the potato skins with oil, bake until crispy and fill with the sweet potato mixture.

Top with mozzarella cheese and bake for another 10 to 15 minutes. Serve with coconut or vegan greek yogurt and lime. Enjoy!
