You'll only need fregola and a few other ingredients to make this easy recipe.
Sauté the onions, asparagus, and corn for 5 minutes. Then add in the garlic, thyme, and oregano.
Add the fregola to the pan and stir constantly for 5 minutes, until it’s nicely toasted.
Add vegetable stock and salt to the pan and cook for 10 minutes to cook fregola al dente.
Stir in the cherry tomatoes and cook for another 2 to 3 minutes.
Remove from heat. Then stir in salt, black pepper, chives, lemon juice, and vegan butter.
Garnish with vegan parmesan cheese and serve.
