1bunch of thyme sprigsdo not remove from the stems (or 2 teaspoons dried thyme leaves)
¼cupcoconut milkor vegan heavy cream
Instructions
In a pot over medium high heat, heat the oil.
Sauté the onions for about 5 minutes, until translucent and fragrant.
To the onions, add the minced garlic, butternut squash, cubed apples, vegetable broth, sea salt, ground black pepper, rosemary and thyme (everything except the coconut milk). Bring to a boil, stirring a few times.
Reduce the heat to a rolling simmer, cover and cook until the butternut squash is fork tender for about 20 minutes. Remove from heat.
Remove the thyme with a slotting spoon (if using the sprigs) and using an immersion blender, puree the soup ingredients until combined and smooth. Or, allow to cool for 5 minutes and then blend everything in a blender.
Put the soup back on the stove on low heat and add the coconut milk and stir. Cook for another 5 minutes.
Taste and adjust the ingredients accordingly, adding more salt or pepper if desired. Serve and enjoy!
