Cook the pasta according to package instructions. Then heat oil and vegan butter in a skillet, add mushrooms, and cook 5-8 minutes.
Lower heat and add the garlic to the skillet. Sauté for about 1 minute, then whisk in the miso and pasta water until the miso is dissolved.
Stir in the vegan Parmesan.
Add the pasta, mushrooms, and parsley to the skillet. Toss to coat and turn off the heat. Season to taste.
