Carrots Coconut Oil Garam Masala Garlic Fresh Ginger Onion Vegetable Broth Coconut Milk Lime Juice Sea Salt
Add carrots and onions to a prepared sheet pan, rub with olive oil, garam masala, salt and pepper, then add garlic cloves.
Roast for 30 to 35 minutes, turning halfway, until the veggies are roasted and carrots are fork tender. Then remove the garlic skins.
Add the vegetables and remaining ingredients to a blender, and blend on high until creamy and smooth.
Garnish with fennel or parsley and a pinch of cayenne.
