Cranberry Orange Bread Ingredients

Unsweetened Soy Milk All-Purpose Flour Apple Cider Vinegar Granulated Sugar Baking Powder Orange Juice & Zest Unsweetened Applesauce Cranberries Walnuts Vanilla Extract

Optional Glaze

Powdered Sugar Orange Juice

Toast walnuts until fragrant. Coat cranberries in about 1 teaspoon of flour so that they don’t sink to the bottom of the pan. Set aside.

Combine milk and vinegar to make vegan buttermilk and set aside. In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.

Add orange juice, zest, applesauce, buttermilk mixture, and vanilla. Mix until just incorporated. Fold in walnuts, and coated cranberries, mixing as little as possible.

Pour into the prepared pan and place a few more cranberries on top. Bake for 55 to 60 minutes. Allow to cool completely.

Mix together the powdered sugar and orange juice until fully combined. Drizzle on the orange glaze.

Enjoy!!
