Olive Oil Red Onion Garlic Corn Kernels Frozen Lima Beans Orange Bell Peppers Zucchini Cherry Tomatoes Paprika Vegan Butter Vegan Feta Salt Black Pepper
Heat oil and saute the onion until just tender. Then add garlic and saute for one minute.
Increase heat and add corn, beans, bell pepper, zucchini, salt, pepper, and paprika. Cook, stirring constantly, until vegetables are tender.
Add butter and cook until melted. Remove from the heat and stir in the tomatoes. Sprinkle with vegan feta cheese and fresh basil if preferred. Serve warm.
