2cups2 tablespoons oat flour - I used Quaker Old Fashioned Oats
1/4cupgranulated sugar
1/4cupbrown sugar
1/4cuphoney
1/2teaspoonbaking soda
1/2teaspoonsalt
1/2cupoilI used coconut oil
1large egg
1teaspoonvanilla extract
⅓cupmilk chocolatechips or chunks, minus a handful
⅓cupdark chocolatechips or chunks
⅓cupwhite chocolatechips or chunks
Instructions
Preheat oven to 350 degrees. Spray a 8x8 baking pan with baking spray or coconut oil.
Make oat "flour" by grinding the equivalent amount of oats in measurement (depends on the size of your oats - just ensure it makes the full amount of oat "flour") in a food processor until ground down. Mix in the baking soda and the salt. Set aside.
In a bowl of a standing mixer, add the two sugars, egg, and oil and vanilla extract and mix together until combined for about 1 minute. Scrape down the sides of the bowl and add the oat "flour" mixture. Mix together for about 3 minutes on a low setting until fully incorporated.
Add in the honey and oats and mix it all together.
Remove bowl from mixer and fold in the chocolate with a spatula or spoon. Mixture will be a bit sticky and thick.
Spoon mixture into the bowl and smooth down. Sprinkle the handful of milk chocolate on top.
Bake for 25 minutes, or until the centre is set and the edges begin to crisp. Allow to cool and cut (or you can cut with a plastic knife or dinner knife when warm). Enjoy!
