This Black Bean Avocado and Corn Salad is the easiest salad you’ll ever make! It takes 15 minutes, is loaded with a variety of delicious flavours and is so versatile as a dip, salsa or salad!
2cupscooked black beansdrained and rinsed thoroughly
1/2cupbell pepperdiced
2tablespoonsdiced jalapeños
1cup157g tomatoes, diced
¼cup37g red onions
¼cup8g parsley
1teaspooncumin powder
½teaspoongarlic powder
¼teaspoonground black pepper
Pinchsalt
Juice of two limes
1cupavocado or ½ avocado124g diced
Instructions
Mix all the ingredients together in a bowl and toss. Ideally, let it sit for 30 minutes so that the lime brings out the best flavors, but you can serve it immediately with tortilla chips.

NotesP.S. if you’re prepping this ahead of time – don’t add the avocado until you’re ready. It keeps it nice and fresh, and a gorgeous colour if you add it when you need it.
