This mousse is the perfect example of when you want dessert, but nothing too light and nothing too heavy.  You want something fall themed, sweet but not too sweet, and something that you can whip up in 20 minutes. This mousse will satisfy all of the above and more.

Making this mousse reminds me of the (now) three Christmas movies I’ve watched this month – they are all so seasonal that it’s almost a guarantee you’ll enjoy them. I think I can get up to about 10 Christmas movies in before December has even started, and while I rejected the thought momentarily of us being into Christmas already, it is November which sadly means Fall and all the recipes it brings will soon be over. I am a sucker for Hallmark channel’s movie, albeit all the same theme and kind of predictable, it makes me feel so warm, fuzzy and cozy on the inside.

But that could just be the hot chocolate. Anyway, on to the mousse.

Making this mousse vegan was pretty easy, especially since I have tins of coconut milk sitting in my fridge begging to be use in some sort of cold dessert or as a garnish for a soup, and all the other ingredients are pretty much naturally vegan. Why I loved this mousse was that it’s unlike a lot I have had while out which tend to be way too thick, one flavour note and too heavy. This mousse is light, thick enough to have with a spoon, filled with the flavours of white chocolate, sweetened pumpkin, mellow coconut milk and the contrasting salty pistachios while providing various textures at the same time. It melts in your mouth immediately and will only leave you wanting more after each bite. This is not only my way of packing in one of the last pumpkin recipes for the season, but also to just highlight how versatile it is. If you’re like me, you’re going to want to get in every last bite before it’s all gone.

White Chocolate Pumpkin Mousse with Crushed Pistachios

Ingredients
  • 10 ounces vegan white chocolate chips
  • 13.5 ounces tin of coconut milk stored in the fridge from overnight
  • 1 cup pumpkin puree
  • 1/4 cup pistachios shells removed and crushed (you can use your hands)

Instructions

  • Heat the chocolate chips with about 2 tablespoons coconut milk and 2 tablespoons water in the microwave for one minute. Remove and stir with a spoon vigorously until chips are melted together and come together like a thick pasta. Place in the freezer until ready to use.
  • In a standing mixer, add the coconut milk (which should be a thick cream once removed from tin) and using the whip attachment, whip for 3-5 minutes on high on thick peaks begin to form. Remove about 1/4 cup and set aside.
  • Add the pumpkin slowly into the coconut milk until incorporated. Add the white chocolate mix in last and whip for another 3-5 minutes until everything is incorporated.
  • Serve in glass containers and top with the coconut milk that was set aside and crushed pistachios.
  • You can serve the mousse immediately or leave it in the fridge until ready.
