Vegan White Chocolate Pumpkin Mousse is topped with crushed pistachios and is incredibly creamy, decadent and so easy to make!
This mousse is the perfect example of when you want dessert, but nothing too light and nothing too heavy. You want something fall themed, sweet but not too sweet, and something that you can whip up in 20 minutes. This mousse will satisfy all of the above and more.
Making this mousse reminds me of the (now) three Christmas movies I’ve watched this month – they are all so seasonal that it’s almost a guarantee you’ll enjoy them. I think I can get up to about 10 Christmas movies in before December has even started, and while I rejected the thought momentarily of us being into Christmas already, it is November which sadly means Fall and all the recipes it brings will soon be over. I am a sucker for Hallmark channel’s movie, albeit all the same theme and kind of predictable, it makes me feel so warm, fuzzy and cozy on the inside.
But that could just be the hot chocolate. Anyway, on to the mousse.
Making this mousse vegan was pretty easy, especially since I have tins of coconut milk sitting in my fridge begging to be use in some sort of cold dessert or as a garnish for a soup, and all the other ingredients are pretty much naturally vegan. Why I loved this mousse was that it’s unlike a lot I have had while out which tend to be way too thick, one flavour note and too heavy. This mousse is light, thick enough to have with a spoon, filled with the flavours of white chocolate, sweetened pumpkin, mellow coconut milk and the contrasting salty pistachios while providing various textures at the same time. It melts in your mouth immediately and will only leave you wanting more after each bite. This is not only my way of packing in one of the last pumpkin recipes for the season, but also to just highlight how versatile it is. If you’re like me, you’re going to want to get in every last bite before it’s all gone.
