Umm, yum.

Mini strawberry cheesecake bites? And healthy? This is heaven.

Using the same almost fat free cream cheese frosting that I showed you yesterday, these gems were created.

As Mr Jessiker Bakes put it, “this is what strawberry cheesecake should taste like.”

I approve that message.

The freshness from the strawberries clearly offsets the sweet cream cheese frosting and everything just comes together perfectly in your mouth. I still have a few left in my fridge. They’re calling me.

Come. Please. I have to resist them as much as I’d rather not. Although, I’d be doing everyone a favour and making a great sacrifice for mankind…

Hollow out the strawberries using a knife, small melon baller or similar gadget. I actually used a tiny metal measuring spoon shaped like a melon baller. 
Then slice a little off the bottom of each strawberry so they sit upright and flat.

Next, fill a pastry bag (fitted with your favorite decorating tip) with the cream cheese spread (frosting), and pipe it into the strawberries. 

Done!
