School is starting back. How did that happen already?! If you’re a mom, dad, guardian or sibling (cue older sibling drop off duties) your entire house may be getting back into getting-ready-for-school gear or already has. My little brother is going back to school next week so after-school snacks have been on my mind – that’s where these bites come in. Hot, gooey cheesy goodness.

For the first time in my life, I’m finished with school. It’s so weird for me! I’m actually not going to be going back to the institutionalised world I know so well. Instead, I’ll be starting work very soon. That means days start early and even much later than I’m used to, and as an avid healthy snacker, that means I need snacks available to me! Mr. Bakes and I created these to be absolutely simple since snack time should be easy and quick AND because we ourselves wanted a quick and easy snack! I opted for goat cheese and feta cheese to be both palatable for kids and adults and it melts incredibly well, creating a crust on the outside so you have a crunchy and cheesy snack. The balsamic vinegar was my favourite touch because I LOVE it on everything (help I’m addicted) and provides even more of a contrast in taste. The process is crazy easy. Roast the grape or cherry tomatoes with the cheese on top. Place on top of crackers. Drizzle with balsamic vinegar or even honey! Eat. Yes please! These have been my go-to snack for a while and are really great for an afternoon break. Try them out on your kids – if they already love feta cheese, goat cheese will provide an even creamier taste and the roasted tomatoes which become slightly sweeter when roasted, are a great way to get them to love tomatoes!

Roasted Tomatoes, Feta and Goat Cheese Bites

Preparation 7 min Cook Time 18 min Serves 10-15     adjust servings

Ingredients

  • About 15 Grape tomatoes, halved? cup feta
  • 2 tablespoons goat cheese
  • 1/4 teaspoon garlic
  • 1/4 teaspoon oregano
  • 10-15 crackers (I used whole wheat)
  • balsamic vinegar or honey, for drizzling (optional)

Instructions

  1. Preheat oven to 400 degrees.
  2. On an oil-sprayed cookie sheet, place halved tomatoes.
  3. In a bowl, mix the garlic, goat cheese and feta cheese then spread onto tomato halves.
  4. Bake for 18 minutes until roasted.
  5. Tomatoes will be hot! Allow to cool for 2 minutes then place on crackers.
  6. Sprinkle with oregano and balsamic vinegar drizzle or honey if desired.
  7. Serve and enjoy!

  1. Oh wow, this looks wonderful. What a fancy after school snack! It looks so easy though, so I don’t see why an after school snack shouldn’t be this gourmet 🙂 At first I thought the crackers were polenta rounds, which would be pretty good too, I think. Or, I’d just eat a bowl of those tomatoes with cheese!

    This is definitely not your average after school snack- what other cheese can I use in place of goat cheese?

      Hey Immaculate, haha it definitely isn’t! Any soft cheese such as cream cheese or mascarpone cheese or even ricotta cheese would replace it, although I think cream cheese would replace it and keep a similar flavour the best (like a herbed cream cheese spread).
