Graham Cracker Triple Berry Yogurt Parfait
Simple.
Delicious.
Sweet.
This was the first time I tried a parfait, and I loved it.
Like, I-could-eat-this-every-day-for-breakfast loved it.
I’ve passed parfaits in hundreds of airport cafe’s over and over and always chose a sandwich instead because well, I was so unsure of it. First of all, I’m a yogurt fan but not the biggest fan. In fact, one yogurt a week is more than enough for me; and now you want me to eat a whole meal consisting mainly of yogurt? I think not.
Except, I think yes. Yes was what I thought as soon as I put the first spoonful into my mouth. Let’s not mention the granola crunch that accompanied the creamy yogurt plus my favourite fruit blueberries accompanied with delicious strawberries and blackberries. Yes was what I thought when I ate the second spoonful, until I finished everything.
This is the perfect on the go breakfast; seeing as how I ate this in the parking lot of the law faculty in my car. I did not regret a second of it. I’m actually excited for my impossible Wednesday mornings now so that I can have parfait!
Graham Cracker Triple Berry Yogurt Parfait
Ingredients
- 1 cup greek yogurt, non-fat or unsweetened
- 1 1/2 tbsp honey
- 1 cup of mixed strawberries, raspberries/blackberries and blueberries
- 3/4 cup graham cracker crunch
Graham Cracker Crunch:
- 3/4 cup graham cracker crumbs
- 1/2 teaspoon salt
- 2 tablespoons brown sugar
- 2 tablespoons melted butter
Instructions
Graham Cracker Crunch
- Mix all the ingredients together
Rest of Yogurt
- Mix 1 tablespoon of honey with yogurt to sweeten, adding more or less to taste.
- Mix the remaining 1/2 tbsp honey with the fruit, coating it. Set aside.
- Spoon some of the yogurt into the bottom of a glass or jar.
- Spoon some fruit on top of the yogurt.
- Spoon some graham cracker crunch on top.
- Repeat this process until you've used all your ingredients.
- Use immediately or refrigerate overnight (I refrigerated overnight)
- P.S. I ended it with graham crunch then fruits because I loved the graham cracker crunch in my first bite!

When I made this I used 1/8tsp of kosher salt. (I don’t know why but it was too salty the first time. Probably because I used kosher salt and that I used salted butter)
I had greek yogurt with vanilla laying around so I used that with no added honey. Though I added honey to the fruit.
Then I just put it all in a bowl because I was lazy. So good. Thank you for the recipe!
