Chicken, cheese and a creamy enchilada sauce are rolled together and baked to reveal quick and easy to make chicken enchiladas for dinner!
Chicken Enchiladas are one of those recipes that have to be on your to-do list if you haven’t already made them. They are the perfect combination of the delicious soft tacos we all know except baked to perfection. This was one of those recipes that I will admit, I was a bit wary to share because I didn’t love the photos, but I figured that it would be a great injustice to not share these with you, especially if you’ve never made them.
The combination is pretty simple, you just need shredded cooked chicken, enchilada sauce, cheese and tortillas, and the rest is up to you. Whether you want to add green onions, re-fried beans, sweet peppers and onions, is totally up to your taste. All you need to do is roll these babies up with the ingredients and bake them for 30 minutes. What will be revealed are golden brown tortillas topped with extra sauce and extra cheese (Um…YES!) with a slightly crunchy exterior and a soft, creamy and balanced inside.
