 These quinoa bites were pretty much the highlight of my weekend. Except of course, The Oscars.

This was by far my favourite Oscars! Ellen was SUCH a funny host!! I enjoyed every second of all the madness of the selfies, pizza and fairy outfit. I think I made a good move by following her on twitter last night.

And 12 Years a Slave took home so many awards, and even better Lupita Nyong’o took home Best Actress in a Supporting Role. I literally spent the night squealing every time they won.

I personally feel like Gravity deserved all of their awards because I thoroughly enjoyed that movie. It’s also quite apparent to me that I need to watch Dallas Buyers Club. NOW.

Buffalo Quinoa Chicken Bites

Now, back to these quinoa bites. Quinoa, the glorious! I’m on a roll with these quinoa meals. These bites are the perfect punch of spice and crunch while still remaining healthy. I added the greek yogurt to replace what was the cream cheese in my original recipe for chicken buffalo bites, so this delivers the creaminess on the inside of the bites minus all those calories. Trust me, this is a snack worth trying! It’s totally guilt free from the bites to the sauce.

They actually aren’t that small, so if you want to make more than the 14 that the recipe says then you just have to make them smaller.  Mr. Jessiker Bakes approved of these again! So again ladies, here is another male approved quinoa recipe, although I’m pretty sure the homemade blue cheese dressing had a lot to do with that (of course). The homemade blue cheese dressing is insanely easy to make AND healthy.

I must warn you, once you try the homemade version, you’ll never want to try the store bought one again. It’s that good.

Buffalo Quinoa Chicken Bites

Buffalo Quinoa Chicken Bites

Preparation 20 min Cook Time 20 min Serves 14     adjust servings

These Buffalo Quinoa Chicken Bites are a healthy, delicious, spicy and quick snack that you can dip into this homemade blue cheese dressing!

Ingredients

  • 1 cup shredded cooked chicken breasts
  • 1 cup cooked quinoa
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons chopped scallions
  • 3 tablespoons hot sauce
  • 1/2 cup shredded cheese
  • 3 tablespoons greek yogurt
  • 1 egg, scrambled in a bowl
  • 1 cup bread crumbs
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Healthy Blue Cheese Dressing

  • 1/4 cup crumbled blue cheese
  • 1/2 cup greek yogurt
  • 1/2 teaspoon dry mustard
  • 1 teaspoon Worcestershire Sauce
  • 1/2 teaspoon ground black pepper
  • Chopped parsley, for garnish

Instructions

  1. Preheat oven to 350 degrees F.
  2. Spray a cookie sheet with non-stick spray and set aside.
  3. In a bowl, mix the quinoa, salt, pepper, scallions and hot sauce. Add the chicken and the cheese next. After this, add the yogurt. Mix until well combined.
  4. In a separate bowl, add the breadcrumbs, the additional salt and pepper and combine to have seasoned bread crumbs.
  5. Add the bowl with the egg beside it and prepare to roll the quinoa bites and dip them.
  6. Using your hands, make balls the size of a tablespoon but squeeze them together slightly until firmly into a ball. Dip the bites into the egg first, letting the excess drip off, and then into the breadcrumbs coating it. Place on the cookie sheet.
  7. Continue until the entire quinoa chicken mixture is in bites.
  8. Bake in the oven for 20 minutes.
  9. Remove and allow to cool for 5 minutes before eating.

Blue Cheese Dressing

  1. Mix all the ingredients for the blue cheese dressing together in a food processor, pulsing once or twice to combine all the flavours. Store in the fridge until ready for use.
  2. Pour into a small bowl for serving. Add parsley as a garnish.

Recipe Notes

Note: Prep time includes if you are cooking the chicken and the quinoa fresh.

As far as I know, this dressing will last as long as your greek yogurt will, which is usually 2-3 weeks.

    I used to watch the Oscars but I just can’t sit through the whole thing anyway so I DVR it and watch/fast-forward most of it (sorry!). I just really wanted to watch Pharrell sing Happy. But Ellen is quite a gem and Lupita’s dress was stunning on her!

  16. These look great. We didn’t get to see the Oscars this year but as they were going on we were actually out at the movies seeing 12 Years a Slave, and we really enjoyed it. Lupita Nyong’o so deserved the award for this role and I could not get over how gorgeous she is, I really hope to see her in more films. And yes, you’ve got to see Dallas Buyers Club ; ). Personally I need to see American Hustle still.

    Someone posted something on Facebook that led me to your site. It’s like finding a hidden treasure. I’ve bookmarked several recipes. I think I’ll start with the mac & cheese cups. Then those quinoa burgers. I love quinoa. I’m not a vegetarian. In fact, I hardly like vegetables. But I know I’ll love those burgers, as will my daughter and her parter, who are both fabulous cooks AND vegetarians. Now I’m hooked on zucchini noodles, and crispy baked zucchini fries. And I do put veggies IN things. I love quinoa with broccoli and sprinkled with some freshly grated parm. Or with chicken and broccoli with soy sauce. I’ll definitely be checking back often. Will be making the buffalo quinoa chicken bites very soon! Maybe have that with some quinoa pasta, or just a salad.

I really want to start eating healthy.The truth is I have no idea where to start! I started to do a little researching, but with all these classifications, (Vegan, Vegetarian, Flexitarian etc) I simply just don’t know where to start or what to do. Is healthy just about eating plant-based foods? Can I eat fish/meat and still be healthy? I really need to know… before I change my mind (LOL) PLEASE HELP!!       Hi Chantai!

      You’re so welcome! I’ll say that this is an old recipe and I don’t eat chicken anymore. I’ll definitely add this blog post idea to my list! I think you need to eat the way that best suits your body, and you really won’t know that until you give it a try! The same week I switched to being a vegetarian I felt a HUGE difference positively! My husband eats chicken and seafood, but no longer eats red meat and has seen a huge positive shift for himself too. You can even be an unhealthy vegetarian/vegan if all you eat is chips and pizza! It’s hard to use the label itself to define what is healthy, but it’s more about what you eat under that label.

      In general, I believe instead of focusing on cutting out, you should focus on adding. Going distract can do harm too and put your body in shock if you suddenly cut everything out. Adding a lot more whole foods (fruits, vegetables, healthy grains) is key to living a more balanced healthy lifestyle. So try to go for three fruits a day and several servings of veggies each day.
