Hello mate! To say my trip to London was fabulous is the understatement of the year. If you’ve been keeping up with me on my facebook and twitter pages then you know exactly what I am talking about. I’m back to blogging and I am giving myself a challenge to blog everyday this month. And not only that…

But to blog ONLY healthy. HEALTHY IS NOT YUCKY! Only sometimes…but I promise not to put anything here that I didn’t personally enjoy. I’m starting law school (I’m a university graduate!) and I just want this month to be about health and fitness for me. This is especially hard since I have a bad injury but I’m determined to exercise past it because I CAN’T lie in bed all day doing nothing but moping over pain (yawn!)

That being said, I’m going to try a mix of all sorts of healthy foods including VEGAN the scariest word ever. Yes it is a little scary but why not try it? I mean I’ve eaten healthy tons of time, and for the past two weeks every single day, so I wanted to share it with you guys. Also, it’s a great way to get out of the summer rut of ordering unhealthy fast food. I can’t promise I won’t have any 😉 but I will promise to share a meal with you EVERY DAY. And that will be breakfasts, lunches, dinners and snacks and (yes for you guys) desserts!


I think the more I say it the more I actually believe myself!

So, I tried a vegan recipe for a snack today! The balanced diet I’m working with…note it’s not a diet diet, but the word diet still means eating plan means that instead of my lazy summer eat twice a day, (or when I was in London eat whenever we could since the Olympics took up a ton of time!!) I’ll be eating 5 times a day: breakfast, lunch and dinner and a snack between breakfast and lunch and a snack between lunch and dinner. That way my metabolism will be kept up. I’m not trying to lose weight but I do want to get toned and just have my body feeling better. Because of that I’ve been doing different kinds of exercise also: gym, swimming, and today specifically I did Zumba and Yoga. Now I’m a yoga fanatic but today was the first time I tried Zumba. Can you say FUN!! After my injury heals I’ll be able to go back to running and walking up Mountain Spring which I’m excited to try. 

Talk about side tracked. My Vegan Chocolate Strawberry Almond Oat Shake was actually yummy – I will not lie it was not DELICIOUS but I did like how it tasted. I had it right before my workout and it actually powered me up a whole lot. Easy ingredients and a simple boost of your Ninja, Blender, Bullet, and voila! I made a double serving one time to keep in the fridge so I don’t have to make it over and over for this week. My serving was a snack serving so it was actually like probably 1/4 of the double recipe. I will give you the recipe for one serving aka a breakfast or two snacks. Let me know what you think! Or if you don’t want to try vegan wait until I do something more down my stream…tomorrow! I’ve missed you guys!

Vegan Chocolate Strawberry Almond Oat Shake by Undressed Skeleton (One of my FAVOURITE tumblr health blogs!)

Note: I changed the unsweetened almond milk to sweetened, lessened the ice cubes by half because I used frozen strawberries, and stevia instead of truvia. I used a tsp of almond butter instead of almonds.

  • 1 Tbsp Whole Grain Oats
  • 8 Large Ice Cubes
  • 1/2 Cup Unsweetened Almond Milk
  • 1 Cup Sliced Strawberries
  • 1 Tbsp Raw Almonds
  • 1/2 Tbsp Unsweetened Cocoa Powder
  • Truvia (optional)
  • 1 Tsp Vanilla
Make sure to add unsweetened almond milk and ice before the rest of the ingredients and blend on high!
