It’s no mistake that I’m in love with quinoa. The very nature of it is that it’s very filling, insanely tasty and goes with just about anything. That’s no different for this salad; I think this may be one of my most favourite quinoa dishes to date because I also really really love Mediterranean food – whether it’s Greek ingredients in this dish, or Lebanese food or delicious French food, I’m completely open to trying it once it’s Mediterranean food. How about we get right into it?

 I have to be honest here. This salad came about from my love of all things feta cheese. Feta cheese is kind of AMAZING. I’m a cheese lover, and out of all the amazing cheeses that I have tasted, feta cheese is still in the top 5 due to it’s tartness, crumbly-ability (is that a real word?) and just it’s amazing flavour. From that obsession I wanted to add it to quinoa in a new way to me, and thought that a Mediterranean inspired salad would be the best way to do this.

I’m not even a fan of cucumbers, but they taste pretty darn good in this salad. The salad itself gives you a burst of flavours in your mouth – sweet, tarty, salt – and textures that after just two bites you will know that you’ve just made the best food decision of your day. It was a family favorite over here so you know I’ll be making this over and over again.

This salad is gluten free which I love. It makes a quick and easy lunch and an even better dinner (after a long day of course). This one is going in my top favs!

Mediterranean Quinoa Salad Bowl

This Mediterranean Quinoa Salad Bowl is loaded with delicious and filling veggies, topped with creamy hummus and comes together in just 20 minutes!

Ingredients

  • 3 cups cooked quinoa
  • 1/3 cup cucumbers
  • 1/3 cup olives
  • 1/3 cup feta cheese
  • 2 to matoes, diced
  • 2 teaspoons parsley
  • 1 tablespoon olive oil
  • 1/2 lime

Instructions 

  • Toss all the ingredients together except the lime. I prefer to serve my salad warm, right after the quinoa has been cooked, but you could easily serve it cold.
  • To reheat, place in the microwave for about 1 minute or until as warm as you like.
  • Squeeze the lime over the salad.

Notes

This is an easily customised salad – feel free to add more of the ingredients or less if you so desire.
