Half a large avocado
cup parsley or cilantro, stems removed
teaspoon sea salt
Juice of one lime
cup olive oil
Blend everything together in a food processor. You can add more water if you want to thin out the dressing. Enjoy!
This recipe is vegan, gluten free and paleo. It stores best in an air-tight jar for a few days in your fridge. It may thicken in your fridge so you can add a little water to it to thin it out.
