I want to tell you about my weekend.

On Saturday night, we were invited to a dinner night for one of my closest friends, kind of pot luck style where everyone brought something. I made strawberry cheesecake empanadas and pizza empanadas, the Mr. made two different versions of jambalaya; subbing shrimp in one for the shrimp allergists, and pork in mine for my allergies. Now, while we expected other people to bring items, I wasn’t expecting the feast ahead: a homemade large rack of ribs on a bed of lettuce and tomatoes, homemade baked mac & cheese, sea bass covered in a sauce, the most delicious chicken I have had in ages, and literally so many more items including a delicious warm apple phyllo streusel, brownies supreme and my favourite of them all, apple cake. I can’t forget the sangria – which we all became better friends with on the third round of it not setting in time and it being mostly sweetened wine.

I say all of this not to show off, but to remind you how when many put together an effort, it can produce a beautiful creation. Saturday night also reminded just how much fun I can have in one night! It turned into a taboo and karaoke night which, in a room full of lawyers-to-be and their hilarious partners, turns into a loud night of attempting to amend taboo rules, laughter to tears and tummy aches and shameless karaoke with no one being shy once they touched the mic.

As the Mr. said on Sunday, sometimes life can get in the way of us as people remembering that we are allowed to have that much fun in one night, and just how fun of people we are! Have you ever had a night like that? Full of so much fun it’s unbelievable, laughter and memories? It is such a true testimony to the beauty of life, and even truer to how beautiful a simple idea can blossom into a great creation.

That’s where these chickpea cakes come in. That photo above? Untouched. I shot it straight out of the camera like that – which kind of blew me away, but I think it tells the story of exactly how I feel about chickpeas – they are an untouched beauty that even in their simplest form are perfect to me. Chickpea the superfood is a story well known, and I love it for its versatility and ability to absorb pretty much any flavourful put into it. When I made these cake I didn’t want to just turn them into a ton of breadcrumbs and stuffing but to let the true flavourful stand out – something the Mr. tells me was delicious and is asking me to make them all.the.time.

I think the citrus flavours and accompanying herbs really morphed these savoury cakes, and since chickpeas are naturally filling, you don’t have to eat a lot to start to feel full. The yogurt sauce is something I need to touch on. It is the perfect combination of slightly tray and lemon-y (my favourite word ever) that a dollop on top is the perfect cherry on top for this meal. You need to give this a try – chickpeas are so much more than hummus, and you won’t regret allowing these chickpea cakes to shine through in their golden brown form.

Chickpea Cakes with Lemon Yogurt Sauce

These Chickpea Cakes with Lemon Yogurt Sauce are a healthy, filling and delicious lunch with fresh herbs and spring flavours.

Ingredients

Chickpea Cakes

  • 1 clove garlic, minced
  • 1 tbsp chopped onions
  • 2 tablespoons oil
  • 1 cup cooked chickpeas, slightly mashed
  • 1 tbsp parsley
  • 1 1/2 tablespoons scallion
  • 1 tablespoon lemon juice
  • 1 slice bread, broken into pieces
  • 1 egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Lemon Yogurt Sauce

  • 1/2 cup plain Chobani greek yogurt
  • 1 tablespoon olive oil
  • 2 teaspoon agave or honey
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons chopped parsley
  • parsley, chopped to garnish

Instructions

Chickpea Cakes

  1. In a pan over medium high heat, drizzle 2 teaspoons oil. Heat garlic and chopped onions together and sauté for a few minutes, heating them through until the onions are slightly translucent. Remove from heat.
  2. In a food processor, add the chickpeas, parsley, scallion, lemon juice, bread, egg, salt and pepper. Add the garlic-onion mixture.
  3. Pulse lightly until it comes together - the mixture won't be like a firm ball, but you'll be able to form soft balls out of it. You can add up to 1 slice of bread to keep for firmer if you so desire.
  4. In a pan over medium high heat, heat the rest of the oil. Form small cakes/patties out of the mixture, enough to make 8, wetting hands first so that they don't stick.
  5. Flatten them a bit with your hand and place in the oil to panfry the patties.
  6. Cook on each side for about 3 minutes each or until golden brown, and then flip, being careful not to break the patties.
  7. Place on a paper towel to cool, then serve on a plate with lemon yogurt sauce.

Lemon Yogurt Sauce

  1. Stir the greek yogurt, olive oil, honey and lemon. together first. Add seasonings and stir until mixed together. Garnish with parsley.
