These quinoa bites were pretty much the highlight of my weekend. Except of course, The Oscars.
This was by far my favourite Oscars! Ellen was SUCH a funny host!! I enjoyed every second of all the madness of the selfies, pizza and fairy outfit. I think I made a good move by following her on twitter last night.
And 12 Years a Slave took home so many awards, and even better Lupita Nyong’o took home Best Actress in a Supporting Role. I literally spent the night squealing every time they won.
I personally feel like Gravity deserved all of their awards because I thoroughly enjoyed that movie. It’s also quite apparent to me that I need to watch Dallas Buyers Club. NOW.
Now, back to these quinoa bites. Quinoa, the glorious! I’m on a roll with these quinoa meals. These bites are the perfect punch of spice and crunch while still remaining healthy. I added the greek yogurt to replace what was the cream cheese in my original recipe for chicken buffalo bites, so this delivers the creaminess on the inside of the bites minus all those calories. Trust me, this is a snack worth trying! It’s totally guilt free from the bites to the sauce.
They actually aren’t that small, so if you want to make more than the 14 that the recipe says then you just have to make them smaller. Mr. Jessiker Bakes approved of these again! So again ladies, here is another male approved quinoa recipe, although I’m pretty sure the homemade blue cheese dressing had a lot to do with that (of course). The homemade blue cheese dressing is insanely easy to make AND healthy.
I must warn you, once you try the homemade version, you’ll never want to try the store bought one again. It’s that good.

As far as I know, this dressing will last as long as your greek yogurt will, which is usually 2-3 weeks.
