It’s funny how circumstances in our lives can change some things completely. Before, when it used to rain I would think “time to take plenty of naps!” Now I think:

1) this lighting is just terrible for photography today
2) time to take plenty of naps!
Okay, so at the same time, some things never change.

I’m convinced it’s due to being in the school system for oh the last 23 years of my life and the hustle and bustle of September and going back to school, usually resulting for the first few weeks in a quick breakfast since I’m trying to squeeze in as much as possible.

I’m guessing you get the hint with the naps comment above.

My craving came back and while I usually fulfil it with a host of green smoothies I decided to switch it up a bit this time. We bought a ton of apples and this is actually one of the easiest ways to get the full flavour of apples and use them up as the same time. With minimal ingredients but a tasty smoothie, we have the apple pie smoothie.

This smoothie was pretty thick and delicious! Having a high powered blender works wonders for producing a smoothie that’s smooth and thick and filled with (wait for it) fall flavour. I’m thinking of adding that to my tagline since I will be saying of quite a lot!  The apple pie flavour comes from adding cinnamon and the honey that makes you feel like you’re drinking a version of apple pie. I loved how all the flavours really came together after just blending them together for just a few minutes. If you’re a cinnamon fan you’ll really enjoy these; the spice really shined through in these smoothies.

It occurred to me that just a little extra effort, you could get an even sweeter and tastier smoothie. Caramelising the apples slightly in a sauce pan than using them not only blends them even smoother, but really gives you that apple pie flavour. It’s about five minutes longer for a quick caramelise and would really amp up the flavour. I made twice the amount and enjoyed this for a few days, but would recommend it fresh when all the ingredients are freshly combined together.

Apple Pie Smoothie

Preparation 3 min Cook Time 5 min Serves 2     adjust servings

Ingredients

  • 3 apples, cored and chopped (skin removed optional)
  • 1 cup Greek yogurt
  • 2 tablespoons almond milk
  • 1 1/2 teaspoons cinnamon
  • 1 tablespoon maple syrup or honey

Instructions

Add all the ingredients to a high powered blender and blend for about 2 to 3 minutes until blended.
