Guess what?! The time I’ve been waiting for has finally arrived: fall!! So, I guess technically it isn’t fall and we have about 20 days left until fall actually arrives BUT I don’t care – it’s fall at Jessica in the Kitchen! I want you to know, you’re going to get a load of recipes for the next few months, not just pumpkin but all the other amazing fall flavours PLUS casseroles and delicious warm dinner ideas. I can’t wait! So, how about we get right into these quesadillas?

As I was thinking of the first recipe to share with you for the fall season, I said to myself, self, let’s do something easy. Something that keeps in mind that back to school season needs some delicious and easy recipes, and that if you’re into football you can have your fall AND football-esque food too. These quesadillas, which I like to think of a lunch or quick dinner more than a breakfast, were something I actually made for breakfast, sans the caramelised onions. They tasted great, but they also tasted like they were missing something. Thyme, check, apple check, delicious gouda cheese check…? Then it hit me – caramelised onions.

15 minutes later we were in business!

The caramelised onions revolutionised these for me. They added the sharpness needed to complement the cheese and contrast to the apple, and the slight sweetness that married all the ingredients. People, I’m talking onions here! If you’ve never tried caramelised onions now is the time.

Now, I’m quite aware that you could easily take 30 minutes just to caramelise the onions – I’ve been there. But I was able to cut it down to 15 minutes and still produce a quite similar end product that will rock your quesadillas. They could also be made ahead of time, in which case this dish would only take you 10 minutes if you’re going slow and watching marathons on HGTV (guilty). Served on a multi grain tortilla or wrap, you have an easy dish that’s also healthy, and reminiscent of fall flavours. Uh, hello fall?! I’m welcome you with open arms.

Apple, Gouda and Caramelised Onions Quesadillas

Preparation 5 min Cook Time 21 min Serves 7-8     adjust servings

Apple, Gouda and Caramelised Onions Quesadillas are sprinkled with fresh thyme and are a perfect easy dish to start fall!

Ingredients

  • 2 apples, cored and sliced thinly
  • 1/2 cup freshly shredded gouda cheese
  • 2 sprigs thyme (stems removed)
  • 2 multigrain tortillas or wraps
  • 1/2 medium onion, peeled and sliced thinly and separated
  • 2 tablespoons butter

Instructions

  1. Heat butter in a pan over medium high heat.
  2. When hot, add the onion slices in (the onions should sizzle), and reduce heat to medium so you don't burn the onions.
  3. Swirl the onions around to ensure it's all covered, and allow to caramelise for 15 minutes, stirring once every 5 minutes. The onions will be soft enough to cut through with the spatula, and will be very tender. If the oil in the pan dries up, add water 2 tablespoons at a time to help finish cooking the onions.
  4. On tortillas or wraps, place the apple slices, then the thyme then the cheese, then the caramelised onions on top. Place the second tortilla or wrap on top.
  5. In a pan over medium high heat, or on a mini grill, place the tortilla. Heat through on one side for 3 minutes, then flip, and heat through on the other side for another 3 minutes.
  6. Alternatively, you can split the ingredients equally through both tortillas or wraps and then fold them over individually (so you would have two different ones instead of one combined one). This can be easier then flipping the large quesadilla and produces the same result.
  7. When both sides are crisp and cheese is melted, slice with a pizza cutter.
  8. Enjoy!

Please Note: I'm aware that there is a much more decadent and longer way of caramelising onions, but this method will produce a very similar result in a much quicker time that allows you to be finished in under 30 minutes!

  26. It’s been a while since I made a quesadilla, and I’ve only made them with fairly traditional ingredients. There really is not reason not to go crazy with this easy concept. This one is an inspiration…great flavors in an easy to eat format.
